Stick and Rudder: An Explanation of the Art of Flying
In the early 1940's, Wolfgang Langewiesche wrote a series of articles in Air Facts analyzing the various aspects of piloting techniques. Based on these articles, Langewiesche's classic work on the art of flying was published in 1944. This book explains precisely what pilots do when they fly, just how they do it, and why. These basics are largely unchanging. The book applies to large airplanes and small, old airplanes and new, and is of interest not only to the learner but also to the accomplished pilot and instructor. Today, several excellent manuals offer the pilot accurate and valuable technical information. But Stick and Rudder remains the leading think-book on the art of flying..

Desserts by the Yard: From Brooklyn to Beverly Hills: Recipes from the Sweetest Life Ever
Sherry Yard, the executive pastry chef for Wolfgang Puck's restaurants, has cast her Desserts by The Yard as a culinary autobiography, organizing its recipes in chapters like "Brooklyn Inspirations" and "London Interlude." This novel approach may frustrate readers seeking, say, cakes all in one place, but helps make the book the fresh and compelling success it is. The recipes do the rest. Yard has included a wide range of sweets that either polish old favorites--see her Black-and-White Cookies (from Brooklyn days) and Flourless Chocolate Cake with Meringue Topping (a London creation)--or that invent in ways both enticing and doable. Formulas like Buttermilk Cheesecake; Rhubarb, Apple, and Fennel Crumble; or Concord Grape Soufflés give some idea of her imaginative range, which is, however, always tethered to practicality and good taste. New and seasoned cooks alike will also appreciate her technical niceties (for example, to help soufflés rise, smear butter upwards when greasing mold sides), as well as Sherri's Secrets (for pithless citrus segments, dip them first in cold water then scrape with the back of a knife). With a tempting-in-itself section on basics like Creamy Caramel Sauce, and dozens of color photos, this is a special baking book in every way. --Arthur Boehm.

Semi-Homemade Cooking
Does the thought of cooking from scratch make you panic? Do you stand in front of your supermarket's canned vegetables display frozen with indecision? Is your fridge filled with takeout containers, and your oven used for storage? If you answered these questions with an emphatic "Yes," Sandra Lee's Semi-Homemade Cooking might be the cookbook for you. There are plenty of excellent quick-and-easy cookbooks out there, but this book feels like a cross between a giant advertisement and one of those free recipe books you get with mail-in proofs of purchase. Every ingredient that can possibly be branded is labeled as such. Lee's Salad Chinois is made with Swanson premium chunk chicken breast, Kikkoman soy sauce, McCormick ground ginger, Hellman's or Best Foods mayonnaise, La Choy chow mein noodles, Fresh Express prepared green salad, Chun King chow mein vegetables, and Dole mandarin orange segments. Gnocchi Dippers are whipped up with Alessi gnocchi, Bertolli olive oil, and, believe it or not, Kraft Velveeta cheese. The Malibu Rum Cake includes Malibu Rum, Duncan Hines Moist Deluxe yellow cake mix, and Jell-O vanilla instant pudding. And not only does Lee dictate brand names, she chimes in with advice on music and wine selections, as well. One can only hope that Wolfgang Puck wrote the introduction to this book without ever seeing it. --Leora Y. Bloom.

Cooking Basics for Dummies (For Dummies (Cooking))
Cooking for Dummies is ideal for the novice chef as well as the apartment dweller with limited cooking space (and knowledge). Miller and Rama first discuss basic culinary tools and techniques before diving into the recipes, easy yet impressive menus simple enough to accommodate last-minute guests. Most recipes allow for variations; for example, the basic recipe for Gruyere Soufflé can--with a few minor substitutions--also make Salmon, Spinach, or Ham Soufflé. The style is simple and direct, and the humorous tone should put even the most timid kitchen neophyte at ease..

Faust (Bantam Classics)
Goethe’s masterpiece and perhaps the greatest work in German literature, Fausthas made the legendary German alchemist one of the central myths of the Western world. Here indeed is a monumental Faust, an audacious man boldly wagering with the devil, Mephistopheles, that no magic, sensuality, experience, or knowledge can lead him to a moment he would wish to last forever. Here, in Faust, Part I, the tremendous versatility of Goethe’s genius creates some of the most beautiful passages in literature. Here too we experience Goethe’s characteristic humor, the excitement and eroticism of the witches’ Walpurgis Night, and the moving emotion of Gretchen’s tragic fate. This authoritative edition, which offers Peter Salm’s wonderfully readable translation as well as the original German on facing pages, brings us Faust in a vital, rhythmic American idiom that carefully preserves the grandeur, integrity, and poetic immediacy of Goethe’s words..
