From the supplier: Food processors are using alternatives to scraped-surface heat exchangers for processing viscous foods. One example is the plate-and-frame exchanger which has large gaps between exchanger plants for handling viscous products. However, the wider gap between plates can cause large pressure drops. Another alternative is the tubular exchanger. It can easily handle high incoming pressure although it requires a trade-off between heat-transfer and flow efficiencies.
